Founded and run by an ex-environmental scientist, Autonomy Distillers is a new venture with a ton of drive to do things a little differently. As you’d expect, sustainability sits at the core of their beliefs. They collect waste fruit for use in their products and shred all incoming cardboard for reuse as packing material.
Amaro means ‘bitter’ in Italian. That’s a bit of a misnomer for many of the drinks in the Amaro category, since many are also sweet enough to be pleasant on their own. The Native Australian Amaro is no different. It’s made from citrus rinds left over from a local juicing factory, as well as a macerated concoction of indigenous herbs and spices. The result is a drink that tastes a lot like ‘liquid Aussie bush’.
Tasting notes:
One faint whiff of this Amaro and you're transported to the bush. Gum nuts and grasslands. River reeds and dry woodlands. Campfires and citronella lamps. It's bitter-sweet and thick on the palate. The native botanicals play on the tongue for a long trailing finish.
Serving suggestions:
- Neat. Ice optional. Garnish with an orange twist.
- Paper Plane. Add 20ml Native Australian Amaro, 20ml bourbon whisky, 20ml Aperol and 20ml lemon juice to a shaker full of ice. Shake and strain into your favourite glass. Garnish with an orange slice.
- Fusion Americano. Fill an old fashioned glass with ice. Add 30ml Native Australian Amaro and 30ml sweet vermouth. Top up with soda water. Garnish with a grapefruit slice.
