This spirit is made from grains smoked with peat from a local Tasmanian peat bog. That’s a bit of a misnomer for many of the drinks in the Amaro category, since many are also sweet enough to be pleasant on their own. It’s made from citrus rinds left over from a local juicing factory, as well as a macerated concoction of indigenous herbs and spices.
