Like with all our liqueurs, we wanted to inject plenty of 'oomph'. \u003c\/span\u003eThink of that famous Italian hazelnut liqueur. Now double the depth, nuttiness and length and remove that artificial nutty taste - that's what we set out to achieve with this indulgent liqueur.\u003c\/p\u003e\n\u003cp\u003eTo make it, we roast and crush 100% Australian hazelnuts (grown on a farm in Victoria in fact). To this nutty paste, we also mix in a smattering of organic cacao nibs to lend a little ‘chocolatey’ edge. We then infuse everything patiently in spirit to slowly extract all the flavourful oils. Finally, we add an infusion of aromatic roots to add a touch more earthiness to the flavour profile. \u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWe use real ingredients throughout and deliberately avoid filtering the liqueur to ensure no flavour is filtered out, so you may notice some sediment and oils that may drift out of the liqueur over time. Pre-fermented to bring out all that chocolatey goodness, we then leave the maceration for a month while giving it a gentle stir at regular intervals until the aroma becomes unbearably enticing. To this we add several infusions of bitter roots for a lingering bitterness and a handful of native lilly pillies (riberries) to lend a floral note. This is normal and comprised of flavourful fatty acids, known as 'floc', that disentangle themselves from the whisky over time. The concept of making a banana liqueur made from \u003cem\u003ereal bananas\u003c\/em\u003e with \u003cem\u003eno fake banana flavour additives\u003c\/em\u003e started as an experiment way back in 2017. After a few failed starts and many, many gloopy messes, we put the project in the 'too hard' basket and it sat on the sidelines.\u003c\/p\u003e\n\u003cp\u003eSeven years later, in 2024 we decided to pull this project out of the woodwork and try another flavour extraction method we'd read about in an old cookbook. It still involves a lot of gloopy messes along the way, but the end result is a thick and tasty liqueur with enough banana 'oomph' to send monkeys and monkey-wannabes into a frenzy. In fact, each 500ml bottle of Banana Liqueur contains \u003cem\u003efive\u003c\/em\u003e bananas.\u003c\/p\u003e\n\u003cp\u003eTo make this decadent liqueur, we cut up ripe QLD grown bananas, keeping both skin and flesh. One portion of bananas is very slowly cooked with sugar for 12 hours until the distillery smells like banana cake. The remainder is infused in cane spirit and distilled. After several rounds of messy filtration, we combine the syrup and the spirit then let it rest and develop in complexity.\u003c\/p\u003e\n\u003cp\u003eThe gloopy solids that remain in the filter bag are rather tasty. Instead of throwing the leftovers away, we give them to a cookie factory next door to turn into banana cookies.\u003c\/p\u003e\n\u003cp\u003eAs with all of our limited edition liqueurs, this one is bottled in up-cycled spirit bottles collected from bars which we've cleaned, de-labelled and polished prior to filling.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cstrong\u003eImportant note\u003c\/strong\u003e: While we have filtered this liqueur several times, it does still have a lot of suspended (flavourful) particulates.
