Pot & Still
Between February and April every year, the 12,000 fig trees on Glen Ewin Estate bear delicious plump organic fruit. Most of this fruit is sold to market under the Willabrand label, but the farm also allows visitors to pick their own. Farmer Willa Wauchope says he never grew up with figs but fell in love with them after moving to the estate, the site of South Australia’s first large scale jam factory, 25 years ago. In those years, Willa and his team have never applied any pesticides to the orchard.
One of Glen Ewin Estate’s products is glace figs, made by poaching figs in their own syrup. In 2016, Willa was left with a surplus of fig syrup and decided to hit up Applewood Distillery to explore the potential to make a fig flavoured gin. Evidently their trials were successful and here we are with Fig Gin, released by Glen Ewin under the Pot & Still brand. Going forward, Willa has plans to do the distillation in-house and transform fig gin to a paddock-to-bottle product.
