The venture was born out of chef Michael Ryan’s long-held interest in bitters, which he was (finally) able to pursue during COVID lockdowns while stepping back temporarily from his restaurant operations.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eMichael works in small batches, using complex blends of over 170 botanicals in his botanical ‘library’ — roots, leaves, fruits, flowers, bark, herbs, and more — often sourced locally or foraged in the Victorian High Country. He employs both maceration and distillation techniques to best extract the flavour from each botanical.\u003c\/p\u003e\n\u003cp\u003eRich chocolate bitters with warm spice and vanilla notes.
