Wild Hibiscus Distilling Co’s Finger Lime Gin is a decade-long labor of love crafted on an 80-acre farm in Kurrajong Heights on the edge of the Blue Mountains. This playful gin features suspended finger lime caviar, offering a burst of aromatic, citrusy flavor with each bite, redefining the G&T experience. The gin highlights a medley of Hawkesbury-grown citrus, including finger lime caviar, oranges, kaffir lime leaves, Tahitian lime leaves, and lemons.

Dubbed "the world’s most difficult gin to make," each small batch takes over a year to produce. Finger limes are first hand-harvested at peak maturity. Then, using custom-designed machinery, the delicate lime caviar is meticulously extracted before being infused in a custom high proof gin for several months to achieve the perfect "pop" and preserve the essence of freshly picked citrus. The gin is cut to drinking strength with spring water from the distillery farm.
