Founded and run by an ex-environmental scientist, Autonomy Distillers is a venture with a ton of drive to do things a little differently. As you’d expect, sustainability sits at the core of their beliefs. They collect waste fruit for use in their products and shred all incoming cardboard for reuse as packing material.

Amber Bitter Aperitivo is Autonomy's take on the popular French 'Suze' aperitif. It's made from bitter gentian root that's balanced with tart quandongs (a type of Australian native peach) and fresh citrus to create an enticingly bittersweet aperitivo.

Tasting notes:

Deep and lingering bitterness that is tempered with the flavours of candied citrus peel and underripe peaches.

Serving suggestions:

  • Neat. Ice highly recommended. Garnish with an orange twist.
  • Amber & Tonic. Pour 30ml Amber Bitter Aperitivo into a tall glass with ice, then top up with tonic water and briefly stir. Garnish with a lemon peel.
  • White Negroni. Pour 30ml Amber Bitter Aperitivo, 30ml Kina, and 30ml gin into a glass with ice. Stir until well combined and cold, then garnish with a lemon peel.

Bitter but delicious

A great alternative to Campari with well rounded flavours rather than just bitterness like Campari. Also nice to support Australian products which are as good or better than the common brands.
