Beechworth Bitters is an artisan producer of amari and cocktail bitters, based in Beechworth in northeast Victoria. The venture was born out of chef Michael Ryan’s long-held interest in bitters, which he was (finally) able to pursue during COVID lockdowns while stepping back temporarily from his restaurant operations.
Michael works in small batches, using complex blends of over 170 botanicals in his botanical ‘library’ — roots, leaves, fruits, flowers, bark, herbs, and more — often sourced locally or foraged in the Victorian High Country. He employs both maceration and distillation techniques to best extract the flavour from each botanical.
In The Weeds is inspired by numerous classic European herbal tinctures. Made with nettle, dandelion, citrus leaves, gum leaves and other herbs foraged or grown around Beechworth, this green concoction is Australia's answer to Chartreuse. We did a side-by-side tasting (In The Weeds vs. Green Chartreuse) and found this local variant to be a bit more complex and brooding, albeit at a slightly lower ABV.
Tasting notes:
Anise, fennel and fresh leaves on the nose. Intensely aromatic. Pleasant initial sweetness on the palate that transforms into something that's reminiscent of a dark tropical storm in the wetlands. A long bitter finish but a delicious and flavourful one.
Serving suggestion:
Keep it simple and enjoy this complex amaro neat or over ice. If you must, garnish with a slice of orange but only sparingly.
