Naked Dark Cacao is a bittersweet concoction of organic fermented cacao, a selection of earthy roots and a good measure of tangy yet floral lilly pillies.

Made right here in our distillery, we designed Naked Dark Cacao to be sipped neat as a digestif, ideally next to a roaring fireplace and accompanied by a couple of squares of dark couverture chocolate.

To make it, we source and macerate cacao grown by one of our geographical neighbours, the Philippines. Pre-fermented to bring out all that chocolatey goodness, we then leave the maceration for a month while giving it a gentle stir at regular intervals until the aroma becomes unbearably enticing. To this we add several infusions of bitter roots for a lingering bitterness and a handful of native lilly pillies (riberries) to lend a floral note. Finally, we add a decent lick of dark sugar to bind everything together with a velvety texture.

We use real ingredients throughout and deliberately avoid filtering the liqueur to ensure no flavour is filtered out, so you may notice some sediment and oils that may drift out of the liqueur over time. Simply give your bottle a quick shake and all will be normal again!

Tasting Notes

On the nose you'll detect generous wafts of dark chocolate interlaced with floral notes and hints of raisins and golden syrup.

On the palate you'll be greeted with an explosion of flavour - a sweet and rapidly rising wave of cacao that starts to bring in traces of earthy roots and that distinctive lilly pilly floral note. The flavours remain for a couple of seconds before falling away quickly into a sustained finish. The finish is predominantly bitter with a slight hint of mint, coating the tongue with a velvety texture and providing a lingering aftertaste that hangs around for a remarkably long time.

    Serving Suggestions

    We designed Naked Dark Cacao to be sipped neat, on ice, or warmed up (perfect for a frigid winter night). But it also packs a punch in some cool cocktails. Here's a couple to get you started:

    Dark Cacao Martini: Combine 15ml Naked Dark Cacao, 30ml vodka, 15ml coffee liqueur and 15ml espresso in a cocktail shaker with ice. Shake until very cold, then strain into a coupe glass. Garnish with some chocolate shavings or coffee beans.

    Cacao x Old Fashioned: In an old fashioned glass, plonk in a large block of ice. Pour over 15ml Naked Dark Cacao, 45ml bourbon whisky and a couple dashes of orange bitters. Stir gently to combine. Garnish with an orange twist.

    Recycled Bottles

    All of our liqueurs, including Naked Dark Cacao, are bottled predominantly in recycled glass spirit bottles. Between our lovely network of bars who help collect empty spirit bottles for us and the empty bottles that get spat out of our own tasting flight production line, we've managed to build up a locally sustainable supply of bottles. These bottles are given a "rough massage" to strip the labels off, then a hardcore hot rinse and a final polish up before being revived with a new liqueur filled life.
