Founded in 2014 by winemaker Sacha La Forgia, Adelaide Hills Distillery came about after Sacha spent time working at a Grappa distillery and met a distiller who recognised his ability and passion and encouraged him to return to Australia and start his own distillery. Heeding this advice, Sacha handcrafted a copper still and in 2015 launched 78˚ Classic Gin which quickly gained a cult following. Such was the distillery's success that in 2021 it was acquired by Mighty Craft, a dealer in spirits, beer and ready to drink cans.

78˚ Classic Gin
The flagship Classic Gin in the 78˚ range is vapour distilled from a grape spirit base using a column and basket distillation method to retain delicate flavours and aromas. A complex and savoury flavour profile is extracted from 12 botanicals including juniper, coriander, orange, lemon, lime, clove, cinnamon, black pepper, nutmeg, star anise, orris root and angelica root.
78˚ Desert Gin
Designed to celebrate the flavours of the deserts of central Australia, Desert Gin is an overproof (48% ABV) gin that champions wattleseed in its botanical profile. Wattleseed grows readily in the desert despite minimal rainfall and its high starch and protein content made it a nutritious bush food for generations of indigenous people. It has a flavour profile akin to that of roasted coffee and cacao nibs. The wattleseed is ground and infused in spirit before combining juniper, blood lime and riverland orange distillates to round out this exotic gin.
78˚ Sunset Gin
With the intention of capturing the beauty of a rural outback sunset in liquid form, this Sunset Gin is made by vapour distilling juniper along with three native botanicals - strawberry gum, bush apple and rosella. The result is a gin with fresh red berries on the nose alongside pine and eucalyptus notes.
