Included gins

'Classic Gin'by 78 Degrees Distillery
78 Degrees Distillery, previously known as Adelaide Hills Distillery, was founded in 2014 by winemaker Sacha La Forgia, who worked in wineries around the world before a stint at a grappa distillery in Italy where he was inspired to start his own distillery. Upon returning home, he made his own copper still and launched 78 Degrees Classic Gin in 2015, which became one of the earlier Australian gins to gain widespread acclaim. Botanicals used in this gin include juniper, coriander, citrus, clove, cinnamon, pepper, star anise, orris root and angelica root.

'Applewood Gin' by Applewood Distillery
Applewood is the distilling branch of an exciting operation in the Adelaide Hills, driven by the dynamic-duo founders of wine label Unico Zelo. The team spent years experimenting before settling on the formula for this gin. To make it, a grape based spirit is re-distilled in the presence of botanicals including juniper, coriander seed, angelica root, ginger root, lemon myrtle (a native shrub), Earl Grey tea, lavender, vanilla, cardamom, macadamia, lemon and orange peel.

'Triple Juniper Gin'by Never Never Distilling
Never Never Distilling is an ambitious operation led by three young lads who were inspired by the remote outback of Australia, the ‘Never Never’, and focused on producing highly original, daring spirits. Their flagship product, the Triple Juniper gin, is a study in the hero botanical of all gins, juniper. To make this gin, juniper is steeped in spirit, placed in the pot still and placed in the vapour basket. This triple dose of juniper is complimented with coriander, fresh lime, fresh lemon, licorice, angelica root, orris root, native pepperberry and cinnamon.

'Fig Gin' by Pot & Still
Between February and April every year, the 12,000 fig trees on Glen Ewin Estate bear delicious plump organic fruit. Most of this fruit is sold to market under the Willabrand label, but the farm also makes glace figs by poaching figs in a syrup. In 2016, the farm was left with a surplus of fig syrup and decided to partner with a local distillery to explore the potential to make a gin using it. Their trials were wildly successful and resulted in Fig Gin, released by the farm under the Pot & Still brand. Nowadays, they do the distillation in-house using a homemade still upcycled from old food manufacturing equipment.

'Aromatic Gin' by Threefold Distilling
Inspired by a gin & tonic, the trio behind Threefold Distilling spent 12 months experimenting before settling on a recipe for their first gin. Operating out of a warehouse in suburban Adelaide, the distillery really crams a lot into a small space which features a gin production and storage area along with a full service bar and cellar door, all within a footprint of about 200 sqm. Aromatic Gin is designed to portray Australian summer in a glass, featuring 11 botanicals including grapefruit , rosemary, lavender, native pepperberry, roasted wattleseed and pink pepper.
