Beechworth Bitters is an artisan producer of amari and cocktail bitters, based in Beechworth in northeast Victoria. The venture was born out of chef Michael Ryan’s long-held interest in bitters, which he was (finally) able to pursue during COVID lockdowns while stepping back temporarily from his restaurant operations.

Michael works in small batches, using complex blends of over 170 botanicals in his botanical ‘library’ — roots, leaves, fruits, flowers, bark, herbs, and more — often sourced locally or foraged in the Victorian High Country. He employs both maceration and distillation techniques to best extract the flavour from each botanical.

The Daisy Age is a super floral amaro with the trademark aromas and tastes of fresh honey stamped all over it. There are 15 flowers used to make it, including daisy, violet, magnolia, saffron, jasmine, lavender and elderflower. Bitterness is derived from dandelion and artichoke, while the sweetness is imparted using honey from Beechworth.

Tasting notes:

As soon as you pick up a glass of this stuff, you feel like you're walking through a thick bed of wild blooming flowers with swarms of bees floating about. For those who don't fancy that scene, the good news is you're safe - it's only imaginary (but very convincing indeed).

Serving suggestion:

We like to keep it simple and enjoy this one over ice. But you can also add a small amount to ice cold soda water or a freshly cracked can of kombucha to lend a floral twist.
