Pot & Still Fig Aperitif is a handcrafted liqueur from Glen Ewin Estate in the Adelaide Hills, South Australia. Established in 1845, this estate boasts over 12,000 fig trees cultivated without chemicals for more than 25 years. The distillery, inspired by the estate's natural bounty, gently poaches estate-grown figs to extract their sweet aroma, essence, and earthiness. This 'fig syrup' is combined with spirit and White Possum Scarletta and gently macerated to perfection. The resulting amaro offers a complex flavour profile that we can't stop adding to our spritzes all year round.
Tasting notes:
On the nose, fig leaves combine with coconut and white pepper. The palate reveals fig confit, dried fruits, and spices; the finish is characterised by bitter citrus, orange flavours, earthy gentian roots, and a peppery note.
Serving suggestions:
- On the rocks. Enjoy the Fig Amaro chilled or poured over ice to appreciate its rich, complex profile.

Amaro Spritz. Combine 30–45ml Fig Amaro with 30–45ml sparkling wine, top with soda water, and garnish with a slice of orange for a refreshing cocktail.
- Figroni. Mix 30ml Fig Amaro with 30ml red vermouth and 30ml gin, stir with ice, and garnish with an orange twist for a fig-inspired take on the classic Negroni.
