Pot & Still Fig Aperitif is a handcrafted liqueur from Glen Ewin Estate in the Adelaide Hills, South Australia. Established in 1845, this estate boasts over 12,000 fig trees cultivated without chemicals for more than 25 years. The distillery, inspired by the estate's natural bounty, gently poaches estate-grown figs to extract their sweet aroma, essence, and earthiness. This 'fig syrup' is combined with spirit and gently macerated to perfection. The result is a cloudy yellow ochre liqueur with a complex blend of fig jam, quince, raisin, and honey flavours, culminating in a finish reminiscent of a well-aged muscat.

Serving suggestions:

  • On the rocks. Enjoy Fig Aperitif chilled or poured over ice to appreciate its rich, fruity profile.
  • Fig Sour. Shake 60ml Fig Aperitif with the juice of half a lime and aquafaba (or egg white) for a silky, vibrant cocktail.
  • Fig Spritz. Combine 30–45ml Fig Aperitif with 30–45ml sparkling wine, top with soda water, and garnish with a slice of lime or fig for a refreshing cocktail.
