This Amaretto Cask Single Malt is the product of our wild and woolly quest to create new and interesting spirit styles.

After making our Oak Aged Amaretto, we were left with a beautifully seasoned cask, still dripping of amaretto. It was at this point where we decided it was time for this unique cask (the first of its kind in Australia) to coax out the soul of a single malt whisky. The result? An intoxicating dance of caramel and marzipan on a bed of spice and oak.

We only made one barrel of this stuff, so quantities are extremely limited. Once they're gone, they're gone!

How It's Made.

We started with a cask of 3.5 year old single malt from the experts at Chief’s Son Distillery (after all, we’re liqueur makers, not whisky distillers). As soon the cask rolled into our distillery, we emptied it, then filled the empty cask with Amaretto. We let it sleep for seven months, then bottled the Oak Aged Amaretto before piping the original whisky back in. The cask was forced to spend a further four gruelling months next to a sun-drenched window before the whisky was dialled down to drinking strength and bottled.

Contains precisely 0.0% artificial colours, flavours and preservatives. Vegan friendly (we don't use any animal products nor processes throughout).

Non Chill Filtered.

We have deliberately avoided chill filtering. This means that you may notice faint haze and floating clumps in your bottle, especially if it's cold. This is normal and comprised of flavourful fatty acids, known as 'floc', that disentangle themselves from the whisky over time. Simply give your bottle a shake and the floc will re-integrate into the whisky and all your beautiful flavour will be back!

Serving Suggestions.

Drink neat, on the rocks, or in a Godfather cocktail (with our Amaretto of course).

Surprise and delight

I didn’t know what to expect but it certainly wasn’t this. It’s probably the most delicious sipper around! Although it has dessert aromas - which are just sensational, there’s a confident peat throughput that brings the grunt back into the glass. I’ve had it neat and with a cube of ice, and it holds up to the best single malt scotches out there when it comes to complexity and execution. 10/10

A little hot for 46% ABV

I find this whisky a little hot for 46% ABV considering I usually enjoy my spirits at cask strength. It might just be Chief’s Son Distillery's preference for the composition of the virgin spirit. The bitterness in the aftertaste and heat lingers in the mouth and throat a lot longer than most spirits at 58% ABV. It had the potential to be outstanding but just didn't quite get there. Still worth trying in my opinion for the novelty.
